Smashed Broad Bean, Feta & Fried Egg
To make broad bean smash, use a fork to very roughly mash broad beans. Stir through dill and feta.
Heat oil in a small frypan over high heat. Crack the egg into frypan and cook 2 mins or until crispy and golden around the edges.
Load smashed broad beans onto a Corn Thins slice then top with fried egg. Season with salt and pepper to serve.
1/3 cup frozen broad beans, defrosted and peeled
1 CORN THINS slice
½ tsp finely chopped dill
1 tbsp crumbled feta cheese
1 tbsp olive oil
Salt and pepper
