Directions

Simply layer on charred capsicum, anchovies & feta onto the CORN THINS slices. Finish off with sprinkling on some parsley leaves & add some pepper if desired.

 

To Make Charred Capsicum

Place capsicum on a chargrill, cook for a few minutes turning once char marks form and capsicum starts to soften, Char on other side. Remove from heat once cooked & let cool slightly, then cut into thin strips. Keep any unused capsicum in the fridge for up to 3 days for later use

Ingredients

3 CORN THINS slices

1 Red capsicum (de-seeded) or store bought charred capscium

Anchovy,

50g Feta  

Parsley
