Recipe

Serves: 12

 

Ingredients

1 tsp ground cumin

1 tsp garam masala seasoning

¼ tsp ground red pepper

1 cup raisins

¾ cup water

2 minced garlic cloves

1 cup dry-roasted almonds

½ cup extra virgin olive oil

3 tbps lemon juice

48 Corn Thins slices

¾ cup chopped Dates

¼ cup chopped fresh mint

 

Directions

  1. Preheat the grill to a medium high heat.
  2. Combine cumin, garam masala and red pepper in medium saucepan.
  3. Place pan directly on grill stirring spices constantly for 30 seconds.
  4. Add raisins, water, and garlic cloves, bring to a boil, stirring occasionally.
  5. Remove from grill and cool slightly.
  6. Pour raisin mixture into food processor with almonds, extra virgin olive oil and lemon juice. Process until a smooth consistency.
  7. Spread each Corn Thins slice evenly with raisin mixture.
  8. Sprinkle with chopped dates and sprinkle with chopped mint.
  9. Serve on a plate with 4 Corn Thins slices for each person.
  10. Enjoy!
