This vegetable often gets a bad rap but is full of health benefits. The produce of the month for August is the mighty potato. One medium potato of around 170g is a good source of vitamin C which promotes an optimal immune system functioning and is needed to make the protein collagen. Potatoes are also a good source of potassium which helps to lower your blood pressure and keep your heart healthy.

Potatoes also boast a good source of vitamin B6 which is needed for your body to metabolise carbohydrates, fats, and protein and to make red blood cells. The mighty potato has other nutrients which support the health of your body including manganese, magnesium, phosphorous, niacin and folate.

Potatoes also help to keep your body healthy as a rich source of antioxidants, phenolic acids, carotenoids, and flavonoids. When potatoes are enjoyed as a whole vegetable a medium sized potato will give you 3.8g of fibre. An adults needs between 25-38g of dietary fibre a day for health. In summary, let the shaming of potatoes stop as they are a great vegetable which promotes optimal health in your body when enjoyed as part of an overall balanced diet.
