Family Friendly Salmon Cakes

 

Serves: 2

 

Ingredients

200g canned salmon with bones in spring water (water drained)

5 Corn Thins slices

½ cup red onion finely chopped

2 tbps chopped fresh dill

1 lightly beaten large egg

1 tbps reduced-fat mayonnaise

2 tsp horseradish

 

Directions
  1. Place Corn Thins slices in a food processor and process until a crumb’s consistency.
  2. In a medium size bowl mix all the ingredients together.
  3. Form the mixture into 4 equal-size patties.
  4. Using extra virgin olive oil spray, coat a medium non-stick pan.
  5. Heat over medium heat and cook the salmon cakes on both sides until golden brown.
